I dedicate this recipe to my friend Laxmi,a keralite. She got married now and her husband loves to have Vathal Kolambu in our south Indian style. She remembered about me and my blog at that moment. But she hasn't find vathal kolambu recipe in my blog. Atonce she mailed me and asked to offer the recipe for her. I prepared this dish today especially for her and posted in blog. Try out it in your kitchen Laxmi!
Ingredients:
Sundakai Vathal – 15 pieces
Kolambu Podi – 5 tbsp
Tamarind Water – 15 tbsp or as u prefer
Salt – to taste
Cooking Oil – a small ladle
Cooking Time: 10 minutes
Service For: 3 People
Cooking Instructions:


Heat oil in a deep pan and add sundakai vathal to it. Let it fry well but do not burnt it. Add kolambu podi and tamarind water to it and mix well so that no lumps are found. Add enough water and salt to it and bring it to boil. Let it to cook until it gets the kolambu consistency and it should be little thick in consistency. When u finish cooking, the oil will float on the dish and it tempts to eat more. If we add more oil, it gives added taste to the dish.
We can preserve this dish in refrigerator and use for two days.
Side Dish: Have it with Rice
